Rose Jam

You will need : one cup of compressed rose petals (red or dark pink works best as white and yellow can taste bitter) OneĀ peeled and diced orange and one peeled and diced lemon (be careful to remove all the white pith when peeling) 750 ml Sugar. 1 liter water.

1. Put all the ingredients in a pot and bring to the boil. Lower the heat and let it boil, uncovered, for about 45 minutes.

2. Test by dropping half a teaspoonful on a clean saucer ,pull a spoon through and if the sides do not run together immediately it is ready for bottling -otherwise you can boil it another few minutes.

3. Pour in clean sterilised bottles and seal.
